Jamiah came to the roastery to taste through a spread of Central and South American coffees with us, exploring different fermentation processes and origins together to select the components for this blend. One coffee that stood out instantly was the Catuai fermented with Cashmere Hops, an experiment we conducted with the team at Finca San Jeronimo in Guatemala. The brightness and citrus notes in this cup stoodĀ out, using this forĀ the base of the blend. We are pairing it with a washed Colombian bean from Finca Santa Barbara,Ā bringingĀ a more driedĀ fruit, sweetĀ component to the blend.Ā
